The Best Chocolate Chip Cheesecake Cookie Recipe

These cookies with cream cheese and chocolate chip simply melt in your mouth. Chocolate Chip Cheesecake Cookies are simple, light and delicious, my favorite cookie recipe.

I often prepare them, for breakfast, with a glass of milk, for snack with a cup of tea or coffee, or whenever I crave for something sweet… I could eat them all the time. I like that they are simple, yet so delicious. My family and I prefer cookies that are not too sweet, but you can always add some sugar, if you wish. I usually make double dose of Chocolate Chip Cheesecake Cookies so that we can enjoy them for a few days.

 

Ingredients

1¼ cup all purpose flour
¼ cup cornstarch
½ teaspoon baking powder
¼ cup unsalted butter, room temperature
4 oz cream cheese, room temperature
1 large egg
1 tablespoon milk
½ teaspoon vanilla extract
1¼ cup powdered sugar
5-6 tablespoon chocolate chip

 

Instructions

In a medium bowl combine flour, cornstarch and baking powder. Leave aside. In a large bowl mix butter and cream cheese, with an electric mixer on medium speed, until it is fine and creamy. Add an egg, milk and vanilla extract and continue mixing. Then, add powder sugar and mix some more until the mixture is fluffy. Add dry ingredients and mix until you get fine dough. Finally, add chocolate chips and stir well. Leave in fridge for an hour.

Preheat the oven to 375 F. Line two baking sheets with parchment paper. Take the dough out of the fridge. Shape it into balls. Place them in the baking sheets, 1.5 inch apart. Flatten the balls using your hands or some firm object. Sprinkle some chocolate chip, if you wish. Bake for 10 minutes. Take them out of the oven and leave to cool in the baking sheets for a few minutes. Transfer them to a wire rack to cool down completely.

Notes

Store them in well sealed container, at a room temperature, for about three days.

Quick & Easy Baked Cake Mix Donuts Recipe

Since this easy donut recipe starts with a cake mix, you can make them in any flavor you can find a cake mix in: chocolate, strawberry, lemon, white, etc.! We found a spice cake mix last week and the donuts made from it were absolutely delicious, especially when topped with a simple glaze.

Now, before I give you the recipe I will say this: cake mix donuts don’t taste exactly like donuts you’d buy at the store. Since they are baked instead of fried the consistency is a little different, although they are quite similar to “cake donuts”. The taste varies depending on the cake mix you choose.

Ok, ready to make cake mix donuts? All you do is mix one dry cake mix with 1 egg, 1/4 cup of vegetable oil, and 1 cup of water. Whisk the ingredients together until well combined – a few lumps will remain. I like to dump the batter into a large resealable plastic bag, then snip off one corner and use that to “pipe” the batter into the Mini Donut Maker, filling the bottom well as shown below.

Once all 6 wells are full, close the donut maker and wait 3 minutes. Open it back up and use the included fork to remove the donuts from the maker and allow them to cool.

Now, for the glaze! Melt 1 tablespoon butter, then whisk in 1.5 cups of powdered sugar and about 2 tablespoons of milk (start with less milk and add a little more as needed). The glaze should be somewhat runny, as you see below. Dip the donut halfway into the glaze, then turn the donut sideways to allow extra glaze to run off. Let it firm up on a cooling rack, adding sprinkles immediately if desired. After a few hours, the glaze gets firm enough to stack donuts on a plate without smooshing.

The Best Chocolate Covered Strawberry Cheesecake Recipe

Many people say cheesecake is one of the hardest things to make. With my recipe, they don’t have to be! I’ve gone through so many recipes and techniques that I’ve nailed down what makes them great. These cheesecakes are among my favorite things to cook (and eat), as they’re not only delicious but impossibly cute. Take them to your next potluck or office party to impress the pants off your friends!

 

Ingredients

For the crust:

  • 1 c. graham cracker crumbs
  • 4 TB unsalted butter, melted
  • 1/4 c. granulated sugar
  • pinch of salt

For the filling:

  • 16 oz. cream cheese, room temperature
  • 2 eggs, whites and yolks separated at room temperature
  • 3/4 c. granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • dash of granulated sugar
  • Assembly and topping:
  • cupcake/muffin liners
  • melting chocolate
  • strawberries

Instructions

Preheat the oven to 375°F. In a small bowl, combine the graham cracker crumbs, sugar, salt and melted butter. Place cupcake liners in a muffin tin and begin dropping rounded Tablespoons of the graham cracker mixture into each liner. Press the crumbs into the bottom of the liner lightly, creating a crust.

Pre-bake for 8 minutes, then remove from the oven and reduce temperature to 350°F. In a large bowl, beat together the cream cheese, granulated sugar, salt and vanilla extract until fully combined and creamy. Beat in the egg yolks one at a time. In a small bowl using a hand mixer, beat the two egg whites on high speed until soft peaks form. Add a dash of sugar and continue beating for another 30 seconds – 1 minute.

Gently fold the eggs whites into the cream cheese, mixing to a smooth yet thin consistency, then divide among the 12 muffin liners until the cups are almost full.

Bake for 20 minutes. Let it rest at room temperature for about 10 minutes until the filling returns to its normal shape. Don’t worry about cracks in the surface, as you’ll be covering them with chocolate. Chill for a minimum of 2 hours before topping.

Using a double boiler, gently melt your chocolate, stirring occasionally to combine. At this point, you can keep the cheesecakes in their liners or choose to remove them to get results like the picture above.

With a regular kitchen spoon, pour chocolate on top of the cheesecakes making sure to coat the entire surface. Wait until the chocolate on the cheesecakes harden before dipping the strawberries in the bowl of melted chocolate and resting on top of each cheesecake.

Ways To Actually Wake Yourself Up In The Morning

Stop drinking caffeine late in the day

To get the best sleep, stop eating or drinking things with caffeine at least eight hours before you want to go to bed. That means soda, coffee, energy drinks, tea, and even chocolate.

 

Start an evening routine

Anything from a nightly cup of (decaf) tea to an evening bath or shower can get your mind and body relaxed and signal that it’s time to start slowing down.

Stop using your bed to watch Netflix

OK, sure, this sounds hard. But when you use your bed for things OTHER than sleep (or sex), your brain stops associating the space with relaxation. So move your binge-watching to the couch and get better shut-eye.

Prepare your breakfast before you go to sleep

Whether it’s an actual overnight recipe or just prepping ingredients for your morning meal, having breakfast almost or all the way ready will be a welcome treat for your tired self.

 

Keep a notepad by your bed

Before sleep, make a list of everything you need to remember the next day, ideas you have, and anything else you want to stop from nagging your brain as you power down.

 

Turn your alarm clock away from you

If you can’t sleep or you wake up in the middle of the night and see a glowing time taunting you, it can make you anxious and less likely to get to sleep.

 

Turn the lights on as soon as you’re up

Actually make your bed

It’s one way to feel accomplished first thing in the a.m. and it sets the tone for your entire day. Plus, it’s much harder to fall back into a fully made bed.

 

Do NOT snooze

Whatever you do, don’t go back to sleep once you’re awake. It can restart your sleep cycle and make you feel groggy for hours.

How to Keep Your Garden Beautiful On A Budget

Planting a flower garden does not have to cost you an arm and a leg nor does it have to take up your entire weekend. There are some simple things you can do that are quick, easy and free. And as I always say, if it’s for free, it’s for me!

 

Get rid of weeds naturally and inexpensively

Use undiluted vinegar to spray on weeds and even grass in sidewalk cracks or bricks. Keep the vinegar in a sprayer and shoot those weeds when you see them.

 

Make your own fertilizer

Epsom salt is a great alternative to fertilizer. It’s made up of magnesium and sulfate which plants love, especially houseplants, roses, tomatoes & peppers. And, not only is it frugal, but it’s also better for the environment. Combine 1 tablespoon Epsom Salt with 1 gallon of water in a watering can. Water your plants with this solution once a month.

 

And the last and to me the most important. Edge your garden beds!

I’m actually amazed at how many people don’t do this simple task. Which, in my opinion, finishes off the whole garden. At the beginning of the spring, when you have cleared out all the dead plants and leaves and turned your soil and/or mulch, edge the garden beds. Simply take a lawn edger and go along the entire length of the garden where it meets the grass. It makes for such a beautiful defined garden. I do it about 3 more times during the summer and fall. Plus you can edge it with the garden trimmer as well each time you mow & trim your lawn. Turn the garden trimmer on it’s side and move it along the edge of the garden bed. You can also do the same thing where the grass meets up with sidewalks or driveways for a professional look.

 

Separate existing plants

Go through your garden and look for plants that can be separated. Separating them and using them in different locations in the garden has a double benefit. The first is that it keeps your existing plants from getting too big and second, it enables you to expand your garden for free.

 

Don’t plant too close

Sometimes when the plants are small, we tend to plant too close together especially in the spring when everything has yet to get to full size. I am known for doing this way too often. Resist the temptation. Keep your plants far apart other wise you will have a crowded mess when they get bigger and wind up moving them all around. Hmm, that sounds familiar. Honey, can you move this plant over here and this plant over there.
